Broccoli and Butternut Squash Curry Recipe

OMG This is one of my favorite dishes. This is a great dish to make towards the end of the week, this way you can use up all your veggies you haven’t cooked up yet.

This one I used:

Broccoli, carrots, scallions, cherry tomatoes, butternut squash and onions. Sometimes, I add tofu cubes at this point.

I had baked a butternut squash and diced it up so it was already pre-cooked.

Start by sauteing your onions, broccoli, carrots, scallions, tomatoes and add a cumin, curry, salt pepper, coriander, turmeric to taste.  Let the seasoning blend well with your veggies.  You can add a few tablespoons of water to prevent sticking. Then add coconut milk or you can use 1/2 coconut milk (lite) and 1/2 unflavored almond milk.

Stir and simmer on low and top with garbanzo beans and chili to taste.

It’s that easy. You can serve it over brown or wild rice or even quinoa.
