Rice & Bean Taco

This is a great fast and easy dinner or lunch option.  I make brown rice almost every other week.  I also make some type of bean like azuki, kidney or pinto.

Grab your rice, beans and hummus if you have some and lay it on a warm corn tortilla. Top with cherry tomatoes and avocado.  You can also use pico de gallo instead.
